Good morning MF Coffee enthusiasts, today we’re going to be showing you guys how to make a Cast-Iron Apple Nutmeg Coffee Cake, MF Coffee style! Before we get into the actual cake making, we need to go through the ingredients (there’s a lot).
For this recipe you will need:
3 tablespoons of butter (preferably cubed)
1/2 cup of packed brown sugar
2 cups chopped peeled Gala apple
1/2 or 1/4 cup of brewed MF Coffee (depends on how coffee-strong you want your cake to be)
2/3 cup of canola oil
1/2 cup sugar
1 large egg plus 1 large egg white, room temperature
2 teaspoons of vanilla extract
1 or 1/2 cups of all-purpose flour
2 teaspoons of ground cinnamon
1/2 teaspoon of salt
1/2 teaspoon of baking soda
1/4 teaspoon of ground nutmeg
For the drizzle you will need :
1/3 cup brewed coffee
1/4 cup heavy whipping cream
1-1/2 cups confectioners' sugar
Now we have the ingredients, let’s get into this MF Coffee Special. First things first, we’re going to want to preheat the oven to 375° in a 10-inch cast-iron or other ovenproof skillet. Then we melt the butter over a low heat. When the butter has melted apples and a 1/4 cup brown sugar needs to be added. Cook and stir until crisp-tender for about 5 minutes. When stirring in coffee make sure its MF Coffee (which can be purchased from our store at mfproducts.co.uk)
The next thing we need to do is beat oil, sugar, egg white, vanilla, and the remaining 1/4 brown sugar until its well-blended in a large bowl. In another bowl, whisk flour, cinnamon, salt, baking soda and nutmeg; then gradually beat into oil the mixture and gently spread over the apple mixture.
All that needs to be done now is the baking. Bake until a toothpick can be inserted and come out clean. This should be roughly 18-22 minutes.
Meanwhile, for the drizzle, in a small saucepan, bring the coffee and cream to a boil then cook until the liquid is reduced to a 1/4 cup for 10-12 minutes. Remove from heat and stir in confectioners' sugar. Let it stand 10 minutes then drizzle all over the cake.
And there you have it, a perfect Cast-Iron Apple Nutmeg MF Coffee Cake (the titles a bit of a mouthful, just like the cake!). For more recipes be sure to like, comment and share this blog we really appreciate the support.
